This was my first time making chicken and mushroom pizza recipe, and it came out so perfect. What I mostly love about making pizza is that it easy to customize, and it works well for quick snacks and family picnics. I tried to save lot of time by using pizza dough flour but I am not sure if it was saved because I had to use yeast.
One of the biggest goals when making homemade chicken and mushroom pizza is achieving a crust that is soft on the inside while still having a slight crispness around the edges.
For me, the secret starts with giving the dough enough time to rise. Many people rush this step, but allowing the yeast to do its work makes a noticeable difference in the final texture.
The best flour for chicken and mushroom pizza dough
The truth is that, flour you use affect the texture of your pizza crust.
Pizza flour is my first choice because it helps create a dough that stretches easily and develops a good structure during baking. The higher protein content supports gluten development, which contributes to a chewy crust.
Just a tip: The package of pizza flour may be confusion like the one I used…. if you’re using Woolies one, make sure you use yeast.
If pizza flour is unavailable, bread flour is a good alternative. All-purpose flour can also work, although the texture may be slightly different.
Pizza flour gives the crust that crispness, I just love it!
Let talk about Activating your yeast for pizza dough
I think we are aware that there are 2 methods of this this correctly, and I’ve used both of them when mixing kind-like dough…. both do the work successfully.
This is usually the quickest method. Simply add the yeast to the flour along with the other dry ingredients and mix everything together before adding the warm water.
Even though the yeast is added directly to the flour, the water should still be lukewarm. The warm water helps activate the yeast once the dough is mixed.
I often use this method when I know my yeast is fresh and active.
The second method involves adding the yeast to lukewarm water before mixing it with the flour. Once the yeast is added, leave it undisturbed for about 5–10 minutes.
During this time, the yeast should become foamy on the surface. This is a sign that the yeast is active and ready to use.
I prefer this method when using when the yeast has been sitting in my cupboard for a while. Seeing the foam gives me confidence that the dough will rise properly.
If the mixture does not become foamy after 10 minutes, the yeast may no longer be active, and it is usually best to start again with fresh yeast.
How Long Should Pizza Dough Rise?
The ideal rising time depends on the temperature of your kitchen.
In my experience, the dough usually takes about one hour to double in size. During colder months, it may take longer.
I like placing the dough in a lightly oiled bowl and covering it with a clingwrap first, followed by clean kitchen towel. Then I leave it in a warm area away from drafts (warm place like oven stove or microwave), but do not turn on.
When the dough has doubled in size, it is ready to be shaped into your pizza base.
Common Pizza Dough Mistakes and How to Avoid Them
There are a few common mistakes that can affect your chicken and mushroom pizza.
- The first is not using right flour that may lead to having wrong pizza texture that may taste unpleasant.
- The second is not kneading the dough enough. Proper kneading helps develop gluten, which gives the dough structure.
- Another mistake is skipping the rising time. Even if you’re in a hurry, allowing the dough to rise properly improves both flavor and texture.
- Finally, avoid rolling the dough too thin unless you specifically want a thin-crust pizza.
Why Seasoned Chicken Makes All the Difference
The chicken is one of the main components of this recipe, so seasoning it properly is important.
I use garlic and herb seasoning, paprika, grill and braai seasoning, and thyme. These seasonings add flavor without overpowering the mushrooms and cheese.
Nice thing is that you can still customize seasonings, you not need to use exact seasonings mentioned above.
Because chicken breast is naturally mild, seasoning helps create a balanced pizza where every bite has flavour.
The Best Way to Cook Chicken Before Topping Your Pizza
I prefer cooking the chicken in a pan with the seasonings before assembling the pizza.
This method allows the spices to coat the chicken evenly while also helping the chicken develop flavor before it reaches the pizza.
Cooking the chicken beforehand is important because raw chicken may not cook evenly during the pizza’s baking time.
Once cooked, allow it to cool slightly before adding it to the dough.
Should You Cook Mushrooms Before Adding Them to Pizza?
This is a common question.
You can add fresh mushrooms directly to the pizza, they came out just right. I add them raw, but when I have a few extra minutes, I prefer cooking them first.
Whether you cook or add them fresh, it makes not difference. Do what you prefer.
Why a Mix of Cheddar and Mozzarella Creates the Perfect Pizza
For this chicken and mushroom pizza, I use a combination of 70% mozzarella and 30% cheddar.
Mozzarella melts smoothly and creates the cheese pull many people enjoy.
Cheddar contributes additional flavor and complements the seasoned chicken.
Using both cheeses creates a balance that works particularly well with mushrooms.
The Ideal Oven Temperature for Homemade Pizza
A hot oven is important.
I usually bake chicken and mushroom pizza at around 220°C. A hot oven helps the crust cook properly while melting the cheese evenly.
If your oven takes time to heat up, allow it to preheat fully before baking.
If you want your cheese to have a some burn’t crust….just turn grill option for like 3-5 minutes. Be careful as you do this process that it doesn’t burn.

You can add onions, peppers, olives, spinach, or even sweetcorn.
If you enjoy spicy food, add chili flakes or sliced jalapeños.

- In a large mixing bowl, combine the pizza flour and yeast.
- Add the oil and lukewarm water. Mix until a dough forms.
- Transfer the dough onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover, and allow it to rise in a warm place for about 1 hour or until doubled in size.
- Slice the chicken breasts into small strips or cubes.
- Season with thyme, braai and grill seasoning, garlic and herb seasoning, paprika, and grated garlic.
- Heat a little oil in a frying pan over medium heat.
- Cook the chicken until fully cooked and lightly browned.
- Add the sliced green pepper and cook for another 2–3 minutes until slightly softened.
- Remove from the heat and set aside.
- Preheat your oven to 220°C (430°F).
- Punch down the risen dough and transfer it to a lightly floured surface.
- Roll or stretch the dough into your preferred pizza shape and thickness.
- Place it onto a greased baking tray or pizza pan.
- Spread a thin layer of tomato sauce over the pizza base.
- Drizzle a little mayonnaise over the sauce.
- Sprinkle a layer of cheddar cheese and mozzarella cheese.
- Arrange the cooked chicken, green pepper strips, and sliced mushrooms evenly over the pizza.
- Finish with another layer of cheddar and mozzarella cheese.
- Bake for 12–15 minutes or until the crust is golden and the cheese is melted and bubbling.
- While the pizza is baking, combine the crushed garlic, chopped coriander, melted butter, and olive oil in a small bowl.
- Mix well.
- Remove the pizza from the oven.
- Brush the garlic mixture around the crust while the pizza is still hot.
- Allow the pizza to cool for a few minutes before slicing and serving.
