Chicken & Mushroom Pizza

This homemade chicken and mushroom pizza is made with a simple pizza dough, seasoned chicken breast, mushrooms, and a combination of cheddar and mozzarella cheese. It is a great option for a family dinner, weekend lunch, or homemade pizza night.

Ingredients
  

For Pizza Dough
  • 3 cups pizza flour
  • 5 g instant yeast
  • 2 tablespoons oil
  • 1 cup lukewarm water
For Chicken Filling
  • 2 chicken breasts
  • 1 teaspoon thyme
  • 1 tablespoon braai and grill seasoning you can use the one available
  • 1 tablespoon garlic and herb seasoning you can use the one available
  • 1 tablespoon paprika
  • 2 cloves organic garlic grated
  • ½ green pepper sliced into strips
For Assembling Pizza
  • Cooked chicken breast sliced or shredded
  • Cooked green pepper strips
  • Mushrooms sliced
  • Mayonnaise
  • Tomato sauce
  • Cheddar cheese grated
  • Mozzarella cheese grated
For Garlic Brush
  • 1 clove organic garlic crushed
  • Fresh dhania coriander, chopped
  • 1 teaspoon butter melted
  • 1 teaspoon olive oil

Equipment

  • Large mixing bowl
  • Measuring cups and spoons
  • Wooden spoon or spatula
  • Baking tray or pizza pan
  • Rolling Pin optional
  • Sharp knife
  • Chopping board
  • Frying pan
  • Small bowl for garlic butter
  • Pastry brush

Method
 

Prepare the Pizza Dough
  1. In a large mixing bowl, combine the pizza flour and yeast.
  2. Read carefully the instructions of your flour package
  3. Add the oil and lukewarm water. Mix until a dough forms.
  4. Transfer the dough onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover, and allow it to rise in a warm place for about 1 hour or until doubled in size.
Cook the Chicken Breast
  1. Slice the chicken breasts into small strips or cubes.
  2. Season with thyme, braai and grill seasoning, garlic and herb seasoning, paprika, and grated garlic.
  3. Heat a little oil in a frying pan over medium heat.
  4. Cook the chicken until fully cooked and lightly browned.
  5. Add the sliced green pepper and cook for another 2–3 minutes until slightly softened.
  6. Remove from the heat and set aside.
For Pizza Base
  1. Preheat your oven to 220°C (430°F).
  2. Punch down the risen dough and transfer it to a lightly floured surface.
  3. Roll or stretch the dough into your preferred pizza shape and thickness.
  4. Place it onto a greased baking tray or pizza pan.
Assemble the Pizza
  1. Spread a thin layer of tomato sauce over the pizza base.
  2. Drizzle a little mayonnaise over the sauce.
  3. Sprinkle a layer of cheddar cheese and mozzarella cheese.
  4. Arrange the cooked chicken, green pepper strips, and sliced mushrooms evenly over the pizza.
  5. Finish with another layer of cheddar and mozzarella cheese.
Bake
  1. Bake for 12–15 minutes or until the crust is golden and the cheese is melted and bubbling.
Make Garlic Butter Brush
  1. While the pizza is baking, combine the crushed garlic, chopped coriander, melted butter, and olive oil in a small bowl.
  2. Mix well.
  3. I did this step before I baked the pizza, and I think it would be nice to do it after bake..
Finish and Serve
  1. Remove the pizza from the oven.
  2. Brush the garlic mixture around the crust while the pizza is still hot.
  3. Allow the pizza to cool for a few minutes before slicing and serving.
  4. Store leftover pizza in an airtight container in the refrigerator for up to 3 days.
    Reheat in the oven or air fryer for the best texture.
