It was only this year when I figured out that you can make meatballs from ground beef, I always had opinion that you need to buy them. YES, you can buy them, but you can make them too. One of the advantages of making them yourself is that you can add spices you like or customise the way you like.

This goes so well with mashed or grilled potatoes, top it off with mushroom sauce (just to make it saucy and not dry). You can still enjoy it without mushroom sauce.

This will be your next popular meal because it affordable and easy to make. I had green pumpkin as side, i beleive in having sides most of time to boost nutritional value:)

Another thing about this dish, it keep you full throughout the day…maybe it a potato mash! If you are really looking for a new meal to add in your home meals, this is your go-to-recipe

Ingredients You’ll Need for Ground Beef Meatballs Meal

The most interesting part is that when you make home meals, you can use whatever seasoning or spices available at home. I can mention spices that I used but it totally up to you to if you wanna use them or try them out.

For Meatballs You’ll need:

  • Ground beef: The heart of this recipe is the ground beef meatballs. You can but ground beef from any store, I bought mine from Food Lover’s market (cost -effective). Using good quality ground beef will give that richness flavour. The amount of ground beef you use may depend on the number of people you’re serving. I used 1000g and it serves 6 people.
  • Onion: It is not compulsory to have onions. The last one I made did not have onion, subsituted it with herbs. If you do add onion, make sure that you cut it finely to blend well.
  • Garlic: It can be ground ginger or normal one, they both work out fine. Gralic gives the dish a delicious aroma and adds bold flavor.
  • Egg: Helps bind the ingredients, and hold the meatballs together as they cook.
  • Herbs: I added dried thyme and parsley to enhance the smell, and looks.
  • Seasoning: For seasoning, black pepper, paprika, and salt work together to build flavour. I will share other seasoning in picture.

How to do perfect Potato Mash

  • Potatoes: You can use normal size potato or baby potatoes. I find normal potatos easy to peel. Make sure they are soft enough before smashing them.
  • Butter: adds richness and gives the mashed potatoes that silky texture everyone loves.
  • Milk: helps create a creamy consistency. Adding warm milk makes the mash smoother and easier to mix without becoming gluey.
  • Potato seasoning or aromat: adds subtle warmth, while salt ensures the potatoes are flavorful and well-seasoned.

mushroom sauce Cooking Method

  • Mushrooms: This is the star of the sauce. Fresh mushrooms is the best option to go for, dont let them stay too long in a fridge. You can slice them or chop them depending on the texture you prefer.
  • Butter: Butter adds richness and helps create a smooth base for the sauce. It also enhances the natural flavor of the mushrooms.
  • Cooking Oil (optional): A little oil can be added with butter to prevent burning and help saute the mushrooms evenly.
  • Garlic: Garlic gives the sauce that savory aroma that pairs perfectly with a meatball meal.
  • Flour or white mushroom soup: Flour is used to thicken the sauce. It helps create that creamy, slightly thick texture that coats the meatballs and mashed potatoes beautifully. One thing I noticed is that if you used heavy cream, you won’t need to thicken it….it thicken itself.
  • Milk or Cream: Milk gives a lighter creamy texture, while cream makes the sauce richer and more indulgent. Either works well depending on how heavy you want the sauce.
  • Seasoning: It could be salt, aromat, black pepper….they all enhance the overall flavour.

How to Make Ground Beef Meatballs (Step-by-Step)

Step 1: Prepare the Meatball Mixture

Start by adding your ground beef to a large mixing bowl. Then add finely chopped onion (if using), minced garlic or ground garlic, and one egg. The egg binds everything together so please do not skip adding it.

Now, use your hands or a spoon to gently mix everything until just combined. Try not to overmix, as this can make the meatballs tough instead of tender.

Step 2: Season Properly

This is where the flavor of your meatball meal really comes together. Add salt, black pepper, and spices like paprika. You can also include chopped parsley, thyme or mixed herbs for freshness.

Make sure the seasoning is evenly distributed throughout the mixture so every bite is balanced of flavour

Step 3: Shape Equal-Sized Meatballs

Take small portions of the mixture and roll them between your palms to form round meatballs. Keeping them the same size helps them cook evenly. You can use a spoon to scoop same size.

A good size is about a golf ball…….big enough to stay tender but small enough to cook through properly.

Step 4: Pan Fry or Bake

You have two options here:

  • Pan frying: Heat a bit of oil in a pan over medium heat. Add the meatballs and cook until browned on all sides.
  • Baking: Place the meatballs on a lined baking tray and bake in a preheated oven at 180°C until cooked through. You can change your setting to grill after bake so that it give brown colour.

How to Make Creamy Mashed Potatoes for the Perfect Meatball Meal

Choosing the Right Potatoes

Start with the right type of potatoes. For the best texture, go for starchy potatoes like russets or all-purpose potatoes. These break down easily and give you that soft, fluffy mash.

Boiling Them Correctly

Cut your potatoes into even-sized chunks so they cook at the same rate. Always start them in cold, salted water…… this helps them cook evenly from the inside out. Let them boil until they’re fork-tender. You should be able to pierce them easily without resistance.

Draining Well

Once the potatoes are cooked, drain them thoroughly. Any leftover water will make your mashed potatoes watery and bland. For even better results, let them sit in the pot for a minute or two after draining so excess moisture can evaporate.

Adding Butter First

Before anything else, add your butter while the potatoes are still hot. This allows the butter to melt fully and coat the potatoes, giving them a rich, smooth base. It’s a small step, but it makes a big difference in texture and flavour.

Adding Warm Milk

Cold milk can cool down your potatoes and affect the texture. Warm your milk slightly before adding it in. This helps keep the mash smooth and creamy while blending in easily. Add it gradually so you can control the consistency, you dont want to add too much.

Mashing Until Smooth

Use a potato masher or ricer for the best results. Mash until smooth, but don’t overdo it. Over-mashing can break down the starch, be gently with mashing.

Avoid hard-mashed potatoes

The key to avoiding gluey mashed potatoes is gentle handling. Don’t use a blender or food processor, and don’t overmix. Keep it simple! Mash by hand, add your butter and milk, and stop once everything is combined and smooth.

How to Prepare Green Pumpkin Side Dish

Preparing pumpkin is the easiest part of this meal. I use baby pumpkin, so they do not need peeling or removal of seeds. You can devide into into smaller chunks or into 2. Make sure the size is the same so they cook evenly.

Place the pumpkin pieces into a pot and cover them with water. Add a pinch of salt, then bring everything to a boil. Let it cook until the pumpkin is fork-tender. You’ll know it’s ready when a fork slides in easily without resistance, but the pieces still hold their shape.

Drain the water and return the pumpkin to the pot. At this stage, you can keep it simple with just salt If you dont taste enough salt, you can still add some after cook.

By now you should know the importance of balancing your dish. Now, I am going to share some other serving ideas especially if you do not like pumpkin.

Steamed vegetables are a great way to add to your meatball meal while adding color and nutrition. Options like green beans, broccoli, or peas work perfectly. They’re quick to prepare and don’t overpower the main dish.

Roasted Carrots

Roasted carrots are great option too because they are mostly available in every household. This substitute very much complements the savory flavor of meatballs. A simple seasoning of salt, pepper, and a drizzle of oil is all you need to make them shine.

Spinach

Spinach is a simple and healthy addition that works well with heavier dishes like meatballs and mash. You can sauté it lightly with garlic or serve it plain with a pinch of salt (best version is keeping it simple).

Cabbage

I never thought cabagge would pair well with this meal, apparently it does.

Keep your cabbage simple, it either you boil it…. season with salt or pan fry it with onion. Try to keep it simple as much as you can.

Ingredients
  

For Meatballs
  • 1000 g ground beef (mince) can use 500g if you're preparing for less people
  • 1 small onion finely chopped
  • 2 cloves garlic minced (you can use ground ginger too)
  • 1 large egg
  • 1 tsp salt
  • 1 tsp black pepper (or any seasoning available)
  • 2 tsp paprika
  • 1 tbsp dry thyme
  • 2 tbsp dry parsley
  • 2 tbsp cooking oil
For the potato mash
  • 5-6 medium potatoes
  • 2 tbsp butter
  • 1/2 cup milk look for consistent, add if still needed
  • 1 tbsp aromat
  • 1 tbsp potato seasoning
For the green pumpkin
  • 4-5 baby green pumpkin cutted into 2 equal parts
  • 2 cups water
  • 1 tsp salt
For the mushroom sauce
  • 1 packet mushroom
  • 2 tsp butter or just oil
  • ½ onion if using
  • 1 tsp seasonings
  • 1 cup milk or cream
  • 1 tsp flour or cornstarch to thicken sauce

Method
 

Step 1: Prepare the Meatballs

  1. In a large bowl, combine ground beef, onion, garlic, egg, paprika, salt, and pepper.
    Mix gently until everything is well combined (don’t overmix).
    Roll into medium-sized meatballs.
    Heat oil in a frying pan over medium heat.
    Fry meatballs until browned on all sides and cooked through.
    Remove and set aside.

Step 2: Make the Mashed Potatoes

  1. Boil potatoes in salted water until soft (about 15–20 minutes).
    Drain well and return to the pot.
    Add butter and mash until smooth.
    Slowly add warm milk while mashing until creamy.

Step 3: Cook the Green Pumpkin

  1. Place pumpkin pieces in a pot and cover with water.
    Add a pinch of salt.
    Boil until soft and tender.
