I think we all enjoy nice, home prepared meals especially when they turn out delicious. I recently tried this couscous meal for the first time, and I was honestly surprised by how delicious and filling it was. You’ll think that you won’t be filled because we’re used to rice, uphuthu etc….TRUST ME! This meal is soo fulfilling. A BONUS is that it easy and quick to make. (Amavila aweze ngapha:)

Couscous is very quick and easy to prepare, which makes it perfect for busy days when you still want a proper homemade meal. I paired the couscous with grilled vegetables and pan-fried lamb rib chops, and the combination was amazing.

The soft and fluffy couscous paired so well with the rich flavor of lamb, while the grilled vegetables add color, freshness, and a healthy touch to the plate. It creates a balanced meal that feels both light and satisfying.

As a side, I made simply cooked spinach with green pumpkin, seasoned only with salt. This gave the dish an African-style feel that reminds you of home-cooked family meals. Honestly, it does not take a lot of time to prepare it. Which is perfect meal for busy moms, ladies who have lot of commitment on daily basis. It is also a complete meal because you get protein from the lamb, healthy vegetables, and carbs from the couscous.

It was my first time trying spinach with pumpkin. I used to love izintanga (pumpkin leaves) together with green baby pumpkin. The spinach and pumpkin combo really ate!

The spinach and green pumpkin on the side add a homely touch and make the plate even more satisfying. Depending on the lamb cuts you use, this couscous meal can also be budget-friendly, depend on where you buy your ingredient or items.

Ingredients Needed for This Couscous Meal

Beside that couscous meal is a simple meal, it also uses simple ingredients that are easy to find and substitute. But you need to understand that each part of the meal adds something special, from the soft couscous to the juicy lamb rib chips and healthy vegetables, and spinach.

For the Couscous

  • 2 cups couscous
  • 2 cups hot chicken stock or hot water
  • 1 tablespoon butter (optional)
  • ½ teaspoon salt
  • 1 tablespoon olive oil

I did not use hot chicken stock but hot water, it was fine but adding stock adds flovour.

For the Grilled Vegetables

  • Broccoli
  • Cornflour
  • Butternut
  • Green beans
  • Herbs
  • Olive oil
  • Vegetable seasoning

The simple way to avoid left over veggies…just buy prepacked veggies that are enough for 1 day meal. If you do not have vegerable season, use any available. And you can use any kind of veggies such as zuchini, onions, pepper etc….

For the Pan-Fried Lamb Rib Chops

  • Lamb rib chops (9 pieces)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 2 tsp grill & braai seasoning
  • 2 tsp traditional spice for braai
  • Olive oil

Same things applies here you can easily substitude depending on what you already have or found in stores. If you do not have all this, you can just season with SALT only.

For the Spinach and Green Pumpkin

  • 2 packets of fresh spinach
  • 2 medium green pumpkin
  • 1 teaspoon salt
  • 1 small onion (cut into small cubes)

Step-by-Step Method for this couscous meal

Step 1: Prepare the Couscous

Start by boiling your stock or water in a pot or kettle. Using stock gives your couscous meal more flavor than plain water. Place the couscous in a large bowl and add a little salt if needed. Pour the hot stock or water over the couscous, making sure it covers everything evenly. Add a small spoon of butter for extra richness.

Cover the bowl with a lid or plate and leave it for 5-10 minutes. This allows the couscous to absorb all the liquid and become soft. After 5-10 minutes, use a fork to fluff it gently. This helps separate the grains and keeps the couscous light and fluffy.

Step 2: Grill the Vegetables

Wash and chop your vegetables into even sizes so they cook at the same time. You can use the listed veggies, or any vegetables you enjoy. Place them in a baking pan and drizzle with olive oil. Add vegetable seasoning. Mix everything well so the seasoning covers all the vegetables. Heat your grill pan or oven tray and cook the vegetables until they are soft and slightly charred.

Step 3: Pan-Fry the Lamb Rib Chops

Season the lamb rib chips with listed seasonings, or you use any available. Make sure the meat is well coated for the best flavor. Heat oil in a frying pan on medium to high heat. Once the pan is hot, place the lamb rib chips carefully into the pan. Do not overcrowd the pan because this can stop the meat from browning properly.

Fry until the lamb is golden brown and cooked through. Turn the pieces so both sides cook evenly. Let the meat rest for a few minutes covered before serving.

Step 4: Cook the Spinach and Green spinach

Cut the green pumpkin into medium pieces. Wash and boil spicach to absorb water. You do not need too much water because spinach cooks quickly. Fry your spicach with onion and add pumpkin. Cook at medium heat so that everything is cooked well. Add salt to season both the spinach and pumpkin.

Just like I mentioned making a delicious couscous meal is easy when you follow a few simple tips. First, do not overcook the couscous or let it stay for longer. Couscous cooks very fast, and if it stays too long in hot water, it becomes soft and sticky. Pour hot stock over it, cover for 5-10 minutes, then fluff it gently with a fork.

Using stock instead of plain water gives your couscous meal much more flavor. Chicken or vegetable stock works very well.

When cooking lamb rib chips, let the meat rest for a few minutes after frying. This helps the juices stay inside, making the lamb soft and juicy instead of dry.

For grilled vegetables, cook them on high heat. This gives them a nice color and smoky flavor without making them too soft.

Method
 

Step 1: Prepare the Couscous

  1. Boil the chicken stock or water in a pot. Place the couscous in a large bowl and add salt. Pour the hot stock over the couscous, then cover the bowl with a lid or plate. Let it sit for 5-10 minutes. After that, use a fork to fluff the couscous gently. Add butter and mix until soft and fluffy.

  1. Clean and pat dry the lamb rib chops. Season them with seasoningsr, and dried thyme.
    Heat oil in a frying pan over medium heat. Add the lamb rib chips and cook for about 5–7 minutes per side, depending on thickness, until golden brown and fully cooked. Remove from heat and let them rest for a few minutes.

Step 4: Cook the Spinach and Green Pumpkin

  1. Chop the green pumpkin into cubes.
    Wash spinach, and boil it for 5 min.
    Cut onions, put oil in a pot and fry onion,
    Add spinach and pumpkin, once your pumpkin is soft add salt for seasoning.
