Couscous Dinner with Lamb Rib Chops and Spinach

This couscous meal is a full, hearty, and flavour-packed dish that is perfect for lunch or dinner. It's paired with colourful grilled vegetables, juicy pan-fried lamb rib chops, and a simple side of salted spinach with green pumpkin. It is an easy homemade meal that feels special enough for family gatherings or weekend cooking. Ingredients
  

For the Couscous

  • 2 cups couscous
  • 2 cups hot chicken stock or water
  • 2 tbsp butter optional
  • 1 tsp salt
  • 1 tbsp olive oil

For the Grilled Vegetables

  • Broccoli
  • cornflower
  • green beans
  • butternut
  • 2 tbsp olive oil

For the Pan-Fried Lamb Rib Chops

  • 9 pieces lamb ribs chops
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 2 tbsp braai & grill seasoning
  • 2 tbsp masterblend for braai
  • 2 tbsp olive oil

For the Spinach and Green Pumpkin

  • 2 packets spinach
  • 2 small green pumpkin
  • ½ onion
  • 1 tsp salt

Equipment

  • 1 Medium pot for couscous you can use bowl
  • Pot for spinach and green pumpkin
  • Frying pan for lamb rib chips
  • Grill pan or oven tray for vegetables
  • Chopping board
  • Sharp knife
  • Mixing bowl
  • Fork (for fluffing couscous)
  • Serving plate or bowl

Method
 

Step 1: Prepare the Couscous

  1. Boil the chicken stock or water in a pot. Place the couscous in a large bowl and add salt. Pour the hot stock over the couscous, then cover the bowl with a lid or plate. Let it sit for 5-10 minutes. After that, use a fork to fluff the couscous gently. Add butter and mix until soft and fluffy.

Step 2: Grill the Vegetables

  1. Wash and chop all the vegetables into medium-sized pieces. Place them in a bowl and add olive oil, and seasoning. Mix well so all the vegetables are coated.
    Heat a grill pan or place them on an oven tray. Grill until tender and slightly charred on the edges. This usually takes about 15–20 minutes.

Step 3: Cook the Lamb Rib Chops

  1. Clean and pat dry the lamb rib chops. Season them with seasoningsr, and dried thyme.
    Heat oil in a frying pan over medium heat. Add the lamb rib chips and cook for about 5–7 minutes per side, depending on thickness, until golden brown and fully cooked. Remove from heat and let them rest for a few minutes.

Step 4: Cook the Spinach and Green Pumpkin

  1. Chop the green pumpkin into cubes.
    Wash spinach, and boil it for 5 min.
    Cut onions, put oil in a pot and fry onion,
    Add spinach and pumpkin, once your pumpkin is soft add salt for seasoning.
