Coconut Custard Scones

Soft, fluffy scones made with coconut, amasi, and custard, finished with a golden egg wash.

Ingredients
  

  • 6 cups cake flour
  • 6 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup granulated sugar
  • 1 cup desiccated coconut
  • 350 g baking margarine 80% fat, very cold
  • 3 large eggs
  • 1 cup amasi cold
  • 1 cup custard cold
  • 1 teaspoon vanilla essence
  • 1 egg for egg wash
  • 2 tablespoons milk for egg wash (optional)

Equipment

  • Large mixing bowl
  • Sifter or fine sieve
  • Box grater (for the frozen margarine)
  • Small bowl or jug, for whisking wet ingredients
  • Floured work surface or board
  • Rolling pin or your hands, for patting out the dough
  • Round scone cutter
  • Baking tray, lined with parchment paper
  • Pastry brush, for the egg wash
  • Cooling rack

Method
 

  1. Preheat your oven to 200 °C, and prepare your baking tray.
  2. In a large bowl, sift together the cake flour, baking powder, baking soda, and salt. Stir in the sugar and desiccated coconut so they are evenly distributed through the dry ingredients.
  3. Grate the cold margarine straight into the flour mixture. Use your fingertips to work it in lightly until the mixture looks like coarse crumbs. Try not to overwork it, since you want small pieces of margarine to stay intact.
  4. In a separate bowl or jug, whisk the eggs, cold amasi, cold custard, and vanilla essence together until combined.
  5. Make a well in the centre of the dry ingredients and pour in the wet mixture. Use a spatula or a butter knife to bring the dough together. Stop mixing as soon as it comes together; a shaggy, slightly rough dough is exactly what you want.
  6. Turn the dough out onto a lightly floured surface. Pat it down gently to about 2 to 3 cm thick. Cut out your scones using a round cutter, pressing straight down without twisting.
  7. Place the scones close together on a lined baking tray, so they touch slightly. This helps them rise upward instead of spreading out.
  8. Brush the tops with the egg wash if using, then bake in a preheated oven for 18 minutes until golden on top and cooked through.
  9. NOTES: Keep the margarine in the freezer until you're ready to grate it, and take the amasi and custard out of the fridge only when you're ready to use them — cold ingredients give the best rise and texture. Egg wash is optional but gives a golden finish. You can chill shaped scones in the fridge for about an hour before baking, but since all the ingredients start cold, this step is optional.
