Moist & Soft Banana Loaf Bread

Ingredients
  

  • 3 ripe bananas overripe are better
  • 2 cups all purpose or cake flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tsp ground cinnamon
  • 2 tsp cornflour especially when used all-purpose flour
  • 2 large eggs room temperature
  • ¾ cup brown sugar
  • 1 tsp vanilla extract
  • ½ cup vegetable oil
  • ½ cup buttermilk or maas (room temperature)

Equipment

  • 1 or 2 Mixing Bowls
  • 1 Whisk or Spatula
  • 1 Load tin

  • Fork or Smasher

Method
 

Step 1: Prepare the oven and loaf pan
  1. Preheat your oven to 190°C (360°F). Grease a loaf pan with butter or oil, then line it with baking paper for easy removal.
Step 2: Mash the bananas
  1. In a large bowl, peel and mash the ripe bananas using a fork or smasher until smooth with only a few small lumps remaining.
Step 3: Mix the wet ingredients
  1. Add vegetable oil, brown sugar, eggs, buttermilk and vanilla extract to the mashed bananas. Whisk well until the mixture is smooth and fully combined.
Step 4: Combine the dry ingredients
  1. In a separate bowl, mix the flour, baking powder, baking soda, cornflour, cinnamon (if using), and a pinch of salt.
Step 5: Make the batter
  1. Gradually add the dry ingredients into the wet mixture. Gently fold everything together using a spatula or spoon. Do not overmix, as this helps keep the loaf soft and moist.
Step 6: Pour into the pan
  1. Pour the batter into the prepared loaf pan and spread it evenly. Tap the pan in the surface before oven.
Step 7: Bake
  1. Bake for 45 minutes, or until a skewer inserted in the center comes out clean
Step 8: Cool and serve
  1. Allow the banana loaf to cool in the pan for 5 minutes, then wrap it with the cling wrap to keep moisture.
