Step-by-Step Instructions for Loaf
- Preheat oven to 180°C and grease your loaf pan.
- In a bowl, mix flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, add sugar and lemon zest. Rub together lightly to release flavour.
- Add butter and oil. Mix until combined.
- Add eggs one at a time and mix.
- Stir in yoghurt, buttermilk, milk, vanilla paste, lemon flavour, and lemon juice. Mix until smooth.
- Add dry ingredients into wet mixture. Mix just until no flour streaks remain. Do not overmix.
- Pour batter into loaf pan and level the top.
- Bake for 40-45 minutes or until a skewer comes out clean.
- Let the loaf cool in the pan for 10 minutes, then move to a cooling rack.
You can also add lemon juice after combine all the ingredients
Glaze Instructions
- Mix icing sugar, milk, vanilla extract, and lemon juice in a small bowl.
- Stir until smooth and pourable.
- Once the loaf is fully cooled, pour glaze over the top.
- Let it set before slicing.
