Ingredients

  • 500 g chicken livers cleaned and trimmed
  • 2 tbsp cooking oil or butter
  • 1 medium Onion Chopped
  • 2 garlic cloves diced
  • 1 tsp paprika
  • 1 tsp Herbs any of your choice
  • Salt and black pepper to taste
  • 1 tbsp tomato paste (optional)
  • ½ cup fresh cream or milk ( use 1 tsp flour to thicken sauce)

Equipment

  • Large frying pan or skillet
  • Wooden spoon or spatula
  • Sharp knife
  • Chopping board
  • Small bowl

Method

  1. 1. Prepare the Chicken Livers

Rinse the chicken livers and remove any tough connective tissue. Pat them dry with paper towels to help them brown nicely during cooking.
  2. 2. Sauté the Onion and Garlic

Heat oil or butter in a large frying pan over medium heat. Add the chopped onion and cook until soft and lightly golden. Stir in the garlic and cook for about 30 seconds until fragrant.
  3. 3. Cook the Chicken Livers

Add the chicken livers to the pan. Cook for 5–7 minutes, stirring occasionally, until browned on the outside and cooked through inside.
  4. 4. Add the Seasonings

Sprinkle in the paprika, mixed herbs, salt, and black pepper. Stir well so the livers are evenly coated with flavour.
  5. 5. Make the Creamy Sauce

Add the tomato paste and stir for 1 minute. Pour in the fresh cream. Alternatively, use milk, then mix well. If you prefer a thicker sauce, put flour and stir it into the pan before adding milk.
  6. 6. Simmer

Reduce the heat and let the sauce simmer for 3–5 minutes until creamy and slightly thickened.
  7. 7. Serve

Garnish with fresh parsley (optional) and serve warm with steamed bread, pap, rice, mashed potatoes, or crusty bread.
