Banana Oreo Muffins

Ingredients
  

Dry Ingredients (Sift all together)
  • 1 & ¾ cups cake flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
Wet Ingredients
  • 4 medium bananas ripe or overripe
  • 2 large eggs room temperature
  • cup vegetable oil
  • ½ cup granulated sugar brown sugar work well too
  • 1 tsp vanilla extract
  • ½ cup buttermilk room temperature
Add-Ins
  • 6 Oreo Cookies crushed for batter
  • 2-3 Oreo Cookies roughly broken for topping

Equipment

  • 2 Mixing Bowls
  • Whisk
  • Spatula or wooden spoon
  • Measuring cups and spoons
  • Fork or potato masher
  • Muffin tray
  • Muffin liners
  • Cooling rack
  • Ice cream scoop or spoon you use measuring cups too

Method
 

Step 1 : Preheat the Oven
  1. Preheat your oven to 180°C. Line a muffin tray with muffin liners or lightly grease the tray to prevent sticking.
Step 2: Mash the Bananas
  1. In a large mixing bowl, mash the bananas until mostly smooth using a fork or potato masher.
Step 3: Mix Wet Ingredients
  1. Add the eggs, vegetable oil, sugar, vanilla extract, and buttermilk to the mashed bananas. Whisk until smooth and combined.
Step 3: Combine the Dry Ingredients
  1. In another bowl, mix together the cake flour, baking powder, baking soda, salt, cinnamon, cloves, ginger, and nutmeg.
Step 5: Make Batter
  1. Add the dry ingredients into the wet mixture. Gently fold together until just combined. Avoid overmixing to keep the muffins soft and fluffy.
Step 6: Add Oreos
  1. Fold in the crushed Oreo cookies gently until evenly distributed throughout the batter.
Step 7: Fill the Muffin Pan
  1. Scoop the batter into the muffin liners, filling each about three-quarters full. Top with extra broken Oreo pieces.
Step 8: Bake
  1. Bake for 18–22 minutes or until a skewer inserted into the center comes out clean.
Step 9: Cool & Serve
  1. Allow the muffins to cool in the tray for 5 minutes before transferring them to a cooling rack. Enjoy warm or completely cooled
